Lucky for us, 2025 has ushered in a crop of hot new spots that are already making waves with locals and travelers alike. From gelato with disco flair to cookies served HOT, these five new Palm Springs openings are serving it up with just the right amount of sass, flavor, and style.

Ash & Vine

Set inside a lovingly restored 1936 bungalow wrapped in bougainvillea – former home of the beloved French Miso Cafe – Ash & Vine is the kind of restaurant that feels like dining at your best friend’s house – if your best friend just so happened to be a world-class chef. Helmed by Chef Matt Resler, the menu is global yet approachable, with bold flavors and an intimate, stylish vibe. It’s already become a foodie crush among Palm Springs locals who know a good thing when they taste it. It's a cozy date-night meets local neighborhood hangout. It’s actually owned by a collective of three (3) friends with a lifetime of experience in hospitality. We love that it’s not pretentious – just delicious, personal, and welcoming.

Bar Issi

If Ash & Vine is your cozy dinner date, then Bar Issi is your chic dinner date alternative. They are serving elevated coastal Italian vibes with seasonal California flair – and it has quickly become the desert’s buzziest new hideaway. Expect house-made pasta and wood-fired pizza, expertly crafted cocktails, and a sexy design-forward space that whispers White Lotus vibes. Palm Springs doesn’t do “subtle,” and Bar Issi is proof that sometimes more is never enough.

Gelato-A-Go-Go

If you’ve been longing to dance your way into dessert heaven, then hop on down to Gelato-A-Go-Go. This new gelateria takes authentic Italian gelato and spins it with retro ‘70s disco vibes. Creamy scoops are served with style – and yes, they’ve got vegan options too (Gregory loved their chocolate oat milk!). It’s fun, funky, and refreshingly different. The perfect spot to cool down after a day in the desert sun or before heading out for a night on Arenas Road.

Hot Cookie

Born in San Francisco’s Castro District, the legendary Hot Cookie has officially landed in Palm Springs, and it fits right in. Known for their cheeky, oversized cookies (and equally cheeky packaging), Hot Cookie is not your grandmother’s bakery. It’s indulgent, irreverent, and a little bit naughty in all the best ways. Grab a box for your friends, or don’t share at all. No judgment here. It’s a sex-positive vibe that screams Castro & LGBTQ+ spirit in the des(s)ert – featuring a wall of very hot customers in their signature underwear ;)

Livs

Nestled inside the Palm Springs Art Museum, Livs is the café locals are already buzzing about – and let's just say, we are living for it (pun fully intended). Spearheaded by Chef Gabriel Woo (of Bar Cecil fame), Livs brings together thoughtfully crafted espresso drinks, a menu as gorgeous as the space itself, and the kind of cultural cachet that makes brunch here feel like an event. Highlights for us were the gooey cinnamon bun, the potato pavé, and the eggs benedict on sourdough (one of the best Gregory has had!). With breakfast, lunch, and Thursday night dinners on the menu, Livs has the potential for being the cultural “it” spot to linger before or after your art fix.
